Traditional Roman carbonara made with eggs, pecorino romano, guanciale and freshly cracked black pepper. No cream required.
Ingredients

- 400 g spaghetti
- 200 g Guanciale
- 3 egg yolks
- 1 whole egg
- 80 g Pecorino Romano
- 5 g Black Pepper
- 10 g salt
Steps

Bring salted water to the boil.

Cook the spaghetti until al dente.

Dice and fry the guanciale until crisp.

Whisk together the eggs and grated pecorino.

Reserve a cup of pasta water.

Toss the pasta with the guanciale.

Remove from the heat.

Stir through the egg mixture.

Add pasta water until silky.

Finish with extra pecorino and black pepper.
