Tender beef slowly braised in red wine and tomatoes before being tossed through ribbons of fresh pappardelle.
Ingredients

- 500 g Pappardelle
- 1 kg Beef chuck
- 30 ml Olive oil
- 1 Onion, diced
- 2 Carrots, diced
- 2 sticks Celery
- 4 cloves Garlic
- 250 ml Red wine
- 800 g Crushed tomatoes
- 500 ml Beef stock
- 2 tbsp Tomato purée
- 2 Bay leaves
- 50 g Parmesan

Season and brown the beef.

Remove the beef and sauté the vegetables.

Add the garlic and tomato purée.

Deglaze with the red wine.

Add tomatoes, stock and bay leaves.

Return the beef to the pot.

Simmer gently for around 3 hours.

Shred the beef into the sauce.

Cook the pappardelle until al dente.

Toss together and finish with parmesan.
